If you are a sushi lover, you might remember eating sushi with some tiny, dark eggs either topping or coating it. Those little dots of crunchy eggs are the Masago Caviar, which is a popular condiment in the Japanese cuisine!

Masago Caviar is made from the roe harvested from Capelin or smelt fish. It is then lightly cured with pure sea salt and given a natural colorant to turn its bright orange color to black.
