Where salmon and small fishes like trout and chub are commonly smoked, smoked tuna is seen less often, making it a specialty delight we love as sashimi or a topping for a salad. The rich, meaty tuna flesh is cured and smoked at low temperatures over the course of several hours to develop a delicately smoky flavor.
