The American Paddlefish caviar is considered an entry-level roe which is harvested from the American Paddlefish. Also known as spoonbill, it is the only living species left in the paddlefish family. This basal ray-finned fish is closely related to sturgeons and is a freshwater fish which comes from the rivers and lakes of Kentucky, Mississippi, and Tennessee.

The caviar sourced from the Paddlefish offers a bold and earthy flavor, but with a beautifully mild and buttery finish. The American Paddlefish caviar is very similar to the Caspian Sevruga caviar, which are small, glossy, and with colors that vary from light silver to dark gray.

A great condiment that is best accompanied with hard-boiled eggs, minced onions, buttered toast points, mini potatoes and creme fraiche.
